Ingredients

- Balsamic vinegar 2 tbsp
- Sourdough bread 2 slices
- Olive oil
- Milk 1 cup
- Heavy cream 1/2 cup
- Salt to taste
- Pepper to taste
- Apple 1/2
- Coconut water 300ml
- Miyoung 나물
- Zucchini 1/2
- Enoki mushrooms as needed
- Red pepper
- Napa cabbage
- Soy sauce
- Allulose 1 tbsp
- Beef for bulgogi 400g
- Bean sprouts
- Enoki mushroom powder
- Shrimp
- All-purpose flour
- White flower wine 800ml
- Ginger 150g
Instructions
- 1Prepare the carrot juice by cooking carrot chunks. Add the cooked carrots to the Vitamix blender with apple, coconut water, and olive oil and blend until smooth.
- 2Prepare mushroom scrambled eggs by sauteing mushrooms with olive oil, salt, pepper, and balsamic vinegar. Scramble eggs in a separate pan with cooking oil and season with salt and pepper.
- 3Prepare burrata salad by slicing fruits and adding burrata. Drizzle with olive oil and white balsamic vinegar.
- 4Make a creamy mashed sweet potato soup (マスープ) by frying Japanese yam and onion with butter then add flour, milk, and heavy cream. Blend in a Vitamix until creamy.
- 5Cut strawberries and steep them in beet root syrup for strawberry latte.
- 6Prepare spicy stew by sautéing spring onions, onions, and pork with sesame oil. Add red pepper powder, miso paste, zucchini, and napa cabbage. Pour water, add shrimp flour and mushroom powder and cook until stew is thickened.
- 7Assemble the shrimp jeon by mixing small pieces of green onion with all-purpose flour and shrimp powder. Add water to form batter. Add a single shrimp to each before frying.
Tips
- *Cook the carrots for about 10 minutes or until they are softened.
- *Soak the chopped strawberries in the syrup for at least 30 minutes. Letting the strawberries sit overnight makes the latte taste even better.
- *Taste and adjust flavor as needed to your liking.
- *When making enggi danpung (강술): Place dry enoki mushrooms into Vitamix and blend until a powder is made. Used for savory dishes. Makes umami taste
- *Store ginger wine in the refrigerator. They don't spoil until you run out.
