Thick Chicken Potato Soup

Ingredients

  • 1 yellow potato
  • 1 sweet potato
  • 4 cups homemade bone broth
  • 1 lb Chicken breast cubed
  • 1 tbsp Rosemary
  • Salt to taste

Instructions

  1. 1Peel and dice the potatoes.
  2. 2Place the diced potatoes in your fanciest pan.
  3. 3Add homemade bone broth.
  4. 4Cook until the potatoes are tender.
  5. 5Chop the chicken into small cubes.
  6. 6In a tall measuring container, put the cooked potatoes with a little broth.
  7. 7Use an immersion blender to blend into a very thick consistency.
  8. 8Pour the pureed potatoes back into the pot.
  9. 9Add chicken and broth.
  10. 10Bring to a boil until chicken is completely cooked.
  11. 11Add rosemary and salt to taste.

Tips

  • *The potato peels aren’t added because the wife has a sensitive stomach.
  • *Rosemary and potatoes - chef’s kiss.
  • *Don’t add water - use bone broth for more flavor.
