Thick Chicken Potato Soup

Ingredients
- 1 yellow potato
- 1 sweet potato
- 4 cups homemade bone broth
- 1 lb Chicken breast cubed
- 1 tbsp Rosemary
- Salt to taste
Instructions
- 1Peel and dice the potatoes.
- 2Place the diced potatoes in your fanciest pan.
- 3Add homemade bone broth.
- 4Cook until the potatoes are tender.
- 5Chop the chicken into small cubes.
- 6In a tall measuring container, put the cooked potatoes with a little broth.
- 7Use an immersion blender to blend into a very thick consistency.
- 8Pour the pureed potatoes back into the pot.
- 9Add chicken and broth.
- 10Bring to a boil until chicken is completely cooked.
- 11Add rosemary and salt to taste.
Tips
- *The potato peels aren’t added because the wife has a sensitive stomach.
- *Rosemary and potatoes - chef’s kiss.
- *Don’t add water - use bone broth for more flavor.
