Aloo Ke Barule

Ingredients
- Fresh coriander leaves: 2 handfuls
- Fresh mint leaves: 1 handful
- Green chillies according to spicyness
- Soaked tamarind: 1 Tbsp
- Chaat masala: ½ Tsp
- Dry mango powder: ½ Tsp
- A Pinch of asofoetida
- Coriander powder: ¼ Tsp
- Cumin powder: ¼ Tsp
- Black and white salt to taste
- Black pepper powder: ¼ Tsp
- Garam masala: ½ Tsp
- Water as needed
- Small potatoes: ½ kg
- Cornflour: 2 Tbsp
- Rice flour: 1 Tbsp
- Red chilli powder: 1 Tsp
- Chaat masala: ½ Tsp
- Salt to taste
- Food color (optional)
- Oil for frying
Instructions
- 1Make the chutney: Combine coriander leaves, mint leaves, green chillies, tamarind paste, chaat masala, dry mango powder, asofoetida, coriander powder, cumin powder, salt, black pepper powder, garam masala and water in a blender and blend until a smooth paste is formed.
- 2Boil and cut the potatoes: Boil the small potatoes in a cooker till 1 whistle and cool down, then cut into half
- 3Mix the dry spices and potatoes: Add cornflour, rice flour, red chilli powder, chaat masala, salt and food colour to the potatoes
- 4Add a little water and mix everything well
- 5Heat the oil and fry the potatoes: Fry in oil at high flame for 3-4 mins.
- 6Serve and eat: Add the green chutney and serve
