Aloo Ke Barule

Ingredients

  • Fresh coriander leaves: 2 handfuls
  • Fresh mint leaves: 1 handful
  • Green chillies according to spicyness
  • Soaked tamarind: 1 Tbsp
  • Chaat masala: ½ Tsp
  • Dry mango powder: ½ Tsp
  • A Pinch of asofoetida
  • Coriander powder: ¼ Tsp
  • Cumin powder: ¼ Tsp
  • Black and white salt to taste
  • Black pepper powder: ¼ Tsp
  • Garam masala: ½ Tsp
  • Water as needed
  • Small potatoes: ½ kg
  • Cornflour: 2 Tbsp
  • Rice flour: 1 Tbsp
  • Red chilli powder: 1 Tsp
  • Chaat masala: ½ Tsp
  • Salt to taste
  • Food color (optional)
  • Oil for frying

Instructions

  1. 1Make the chutney: Combine coriander leaves, mint leaves, green chillies, tamarind paste, chaat masala, dry mango powder, asofoetida, coriander powder, cumin powder, salt, black pepper powder, garam masala and water in a blender and blend until a smooth paste is formed.
  2. 2Boil and cut the potatoes: Boil the small potatoes in a cooker till 1 whistle and cool down, then cut into half
  3. 3Mix the dry spices and potatoes: Add cornflour, rice flour, red chilli powder, chaat masala, salt and food colour to the potatoes
  4. 4Add a little water and mix everything well
  5. 5Heat the oil and fry the potatoes: Fry in oil at high flame for 3-4 mins.
  6. 6Serve and eat: Add the green chutney and serve
