Blanket Dumplings

Ingredients
- 1 lb ground pork or chicken
- 2 garlic cloves, grated or minced
- 1 egg
- 1/2 - 1 tsp ginger, grated or minced
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp sesame oil
- 1/4 cup green onion
- black pepper
- 2 tsp corn starch
- 1 cup Napa cabbage, salted to wilt and draw out water
- Mayonnaise
- Soy Sauce
- Chili crunch oil
- Rice or white distilled vinegar
- Pocket MSG
- Wonton wrappers
- Water
- Sesame seeds
Instructions
- 1Thinly slice or mince Napa cabbage, then put it in a small mixing bowl with a pinch of kosher salt. Work the salt in and set aside.
- 2Take about 1 lb of ground pork, a couple of garlic cloves, a little bit of ginger, soy sauce, a splash of rice vinegar, a little sesame oil, some black pepper, a little bit of thin sliced green onion, 1 egg, and a little corn starch.
- 3Give all your cabbage a tight squeeze.
- 4Mix the ground pork mixture together.
- 5Form your mixture into little balls, and keep them small.
- 6Make my favorite drizzle of all time! Mix some Mayo, a little bit of soy sauce, solids from your favorite chili crunch oil, and a little splash of rice vinegar.
- 7In a pan over medium heat, we're going to get a little bit of oil hot and then gently drop our meatballs into our hot oil. Leave a little space in between all your meatballs.
- 8Be patient, but once your meatballs have a little bit of color on one side, flip them to the other side.
- 9Once you have color on the other side of your meatball, you can use to cook for maybe a total of 4 to 5 minutes.
- 10Get rid of any excess fat with a paper towel. I'll just tilt my pan so it pools to one end.
- 11Drape one wonton wrapper over each of your meatballs.
- 12Add a splash of water to the pan. Start with maybe a quarter of a cup.
- 13Quickly cover these up.
- 14After a few more minutes, your wonton wrappers will have clung to your meatballs. You'll be able to see through them, and the corners of our wonton wrappers will make contact with this pan turn nice and golden brown.
- 15Carefully plate them.
- 16Drizzle your spicy umami mayo. Garnish with as much sliced green onions and sesame seeds as you love. Keep plenty of chili crunch oil close by.
Tips
- *You can cook this mixture crumbly and break it up with a spoon and eat it over rice or in lettuce wraps, it’s delicious.
- *Pocket MSG can be added to the drizzle if no one's looking.
