Cheesy Garlic Rolls

Ingredients

  • 230 g lukewarm milk (1 cup)
  • 2 eggs, room temperature
  • 75 g unsalted butter, soft or melted (⅓ cup)
  • 50 g granulated sugar (¼ cup)
  • 540 g bread flour (4¼ cups)
  • 10 g salt (1¾ tsp)
  • 7 g fast action yeast (2¼ tsp / 1 packet)
  • 140 g very soft unsalted butter (10 tbsp)
  • 30–40 g garlic, finely grated (6–8 cloves / 2–3 tbsp)
  • 5 g salt (1 tsp)
  • 8 g parsley (2 tbsp)
  • 8 g chives (2 tbsp)
  • Pinch chili flakes (optional)
  • 250 g mozzarella, shredded (2 cups)
  • 120 g cheddar, shredded (1 cup)
  • 35–50 g parmesan (⅓–½ cup)
  • 1 egg
  • 1 tsp milk or cream
  • 45 g melted butter (3 tbsp)
  • 1 tbsp parsley
  • 1 tbsp chives
  • Pinch of salt (if using unsalted butter)

Instructions

  1. 1Make the dough by combining lukewarm milk, eggs, soft/melted unsalted butter, granulated sugar, bread flour, salt, and yeast.
  2. 2Knead the dough until smooth and elastic.
  3. 3Place the dough in an oiled bowl, cover, and let it rise for 1-1.5 hours or until doubled.
  4. 4Roll out the dough into a large rectangle.
  5. 5Mix together very soft unsalted butter, garlic, salt, parsley, and chives for the garlic butter filling.
  6. 6Spread the garlic butter evenly across the surface of the dough, leaving a tiny border on one side.
  7. 7Sprinkle mozzarella and cheddar over the garlic butter, optionally sprinkle parmesan.
  8. 8Roll the dough into a log, slowly and tightly to avoid gaps.
  9. 9Cut the log into 8-12 rolls using thread or knife.
  10. 10Place rolls in a greased baking pan. Cover and let rise 30–45 minutes until puffy.
  11. 11Brush the rolls lightly with egg wash.
  12. 12Bake in a preheated oven at 190°C for about 15–20 minutes until golden brown.
  13. 13After baking, brush the rolls immediately with the butter herb glaze.

Tips

  • *Roll the dough tightly and evenly to keeps the layers neat and prevents gaps.
  • *Add a pinch of chili flakes in the garlic butter filling for a little heat.
