Easy and Fast Neapolitan Pizza at Home Without a Mixer

Ingredients
- 500g flour
- 400ml water
- 3g fresh yeast or 1g dry yeast
- 15g salt
Instructions
- 1Dissolve yeast in water.
- 2Add water with yeast to the flour and mix.
- 3Cover and let rest for 15 minutes.
- 4Add salt and continue to mix gently.
- 5Cover and let rest for another 15 minutes.
- 6Remove dough from the bowl, stretch slightly and fold over a few times.
- 7Let rest covered for another 15 minutes.
- 8Divide the dough into 3 panetti.
- 9Cover the panetti with plastic wrap and let rise until doubled, about 6-8 hours at room temperature.
- 10Preheat the oven to its highest temperature with the pizza stone inside for at least 40 minutes.
- 11Cover the dough with semolina and stretch with your hands.
- 12Add tomato sauce and mozzarella and top with basil and a drizzle of oil after baking.
- 13Bake the pizza until crust is golden.

- *The dough is high hydration, about 80%.
