Easy Chicken Curry

Ingredients

  • 2 tablespoons ghee
  • Olive oil
  • Bay leaf
  • Cinnamon stick
  • Cardamom pod
  • Whole cloves
  • Kashmiri red chili
  • 1 sliced onion
  • Salt
  • Chicken thighs
  • Yogurt
  • Crushed garlic
  • Ginger paste
  • Turmeric
  • Cumin
  • Coriander
  • Chili powder
  • Garam masala
  • Fresh coriander
  • Fresh mint
  • Kasuri methi
  • Crispy fried onions
  • Tomato puree
  • Fresh ginger slices

Instructions

  1. 1Add ghee and olive oil to a large pan.
  2. 2Add bay leaf, cinnamon stick, cardamom pod, whole cloves, and Kashmiri red chili to the pan and cook for 30 seconds.
  3. 3Add sliced onion and a pinch of salt.
  4. 4In a bowl, add chicken thighs, yogurt, crushed garlic, ginger paste, a pinch of salt, turmeric, cumin, coriander, chili powder, garam masala, fresh coriander, fresh mint, kasuri methi, crispy fried onions, and tomato puree. Mix together.
  5. 5Add the chicken mixture to the pan. Cook on high heat for 3-4 minutes.
  6. 6Simmer for 15-20 minutes on low heat.
  7. 7Add fresh ginger slices.
