Easy Chicken Curry

Ingredients
- 2 tablespoons ghee
- Olive oil
- Bay leaf
- Cinnamon stick
- Cardamom pod
- Whole cloves
- Kashmiri red chili
- 1 sliced onion
- Salt
- Chicken thighs
- Yogurt
- Crushed garlic
- Ginger paste
- Turmeric
- Cumin
- Coriander
- Chili powder
- Garam masala
- Fresh coriander
- Fresh mint
- Kasuri methi
- Crispy fried onions
- Tomato puree
- Fresh ginger slices
Instructions
- 1Add ghee and olive oil to a large pan.
- 2Add bay leaf, cinnamon stick, cardamom pod, whole cloves, and Kashmiri red chili to the pan and cook for 30 seconds.
- 3Add sliced onion and a pinch of salt.
- 4In a bowl, add chicken thighs, yogurt, crushed garlic, ginger paste, a pinch of salt, turmeric, cumin, coriander, chili powder, garam masala, fresh coriander, fresh mint, kasuri methi, crispy fried onions, and tomato puree. Mix together.
- 5Add the chicken mixture to the pan. Cook on high heat for 3-4 minutes.
- 6Simmer for 15-20 minutes on low heat.
- 7Add fresh ginger slices.
