Ingredients
- **Brownie dough**
- 50g hotcake mix
- 1 egg
- 50g butter
- 15cc milk
- 10g unsweetened cocoa powder
- 100g chocolate bar
- **Cookie dough**
- 100g hotcake mix
- 1 egg
- 50g sugar
- 50g butter
- 50g chocolate bar
Instructions
- 1Preheat oven to 170℃/338℉.
- 2For the brownie dough, break 50g of the chocolate bar and combine it with 50g of the butter in a bowl. Microwave at 600W for about 20 seconds until melted. Mix well until smooth, microwaving further if needed.
- 3Add 1 egg and mix quickly. Add milk and mix well.
- 4Sift in hotcake mix and cocoa powder. Mix until just combined, then stir vigorously about 30 times.
- 5Break 50g of chocolate into pieces and add to the brownie dough.
- 6Pour brownie dough into 16cm square mold and spread. Tap a few times to remove air bubbles.
- 7For the cookie dough, soften 50g of butter and cream with 50g of sugar. Whisk one egg in a separate container then add to the creamed butter/sugar. Stir well until combined.
- 8Add hotcake mix to the butter mixture and mix until just combined. Break 50g of chocolate into pieces and stir into the cookie dough.
- 9Drop the cookie dough onto the brownie dough and spread it out. Tap a few times to remove air bubbles.
- 10Bake at 170℃/338℉ for 40 minutes.
- 11Check for doneness with a toothpick. Cool completely before cutting into squares.
Tips
- *Black chocolate is recommended, but milk chocolate can be substituted for up to 50g of the chocolate
- *Use unsalted butter for a less salty treat; salted butter is fine too, but will have a hint of saltiness
- *After about 15 minutes of baking, rotate to ensure even baking
- *If top is browning too quickly, cover with aluminum foil while baking
- *If not fully baked after 40 minutes, bake an additional 5 minutes
