Crispy Layered Spiral Paratha

Ingredients
- 300g all-purpose flour
- 2g salt
- 190g 50-60 degree hot water
- One handful of chopped green onion
- Cooking oil, as needed
- 2 tablespoons all-purpose flour
- 1/2 teaspoon Chat Masala
- Cooking oil, as needed
Instructions
- 1Combine flour and salt. Add hot water, mixing until crumbly.
- 2Add green onion and mix well, knead to form a soft dough.
- 3Divide dough into small balls, flatten, brush with oil, cover, and rest for 30 minutes.
- 4Combine 2 tablespoons of flour, Chat Masala and cooking oil to make a paste.
- 5Roll a dough ball thinly, spread the paste over it, fold, and roll up into a spiral. Press down the end.
- 6Let the paratha rest for 10 minutes, then roll into a circular shape.
- 7Cook on a preheated oiled skillet, add oil on both sides. Cook until golden and crispy.
- 8Lightly press the paratha to separate layers while hot.
