Crispy Layered Spiral Paratha

Ingredients

  • 300g all-purpose flour
  • 2g salt
  • 190g 50-60 degree hot water
  • One handful of chopped green onion
  • Cooking oil, as needed
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon Chat Masala
  • Cooking oil, as needed

Instructions

  1. 1Combine flour and salt. Add hot water, mixing until crumbly.
  2. 2Add green onion and mix well, knead to form a soft dough.
  3. 3Divide dough into small balls, flatten, brush with oil, cover, and rest for 30 minutes.
  4. 4Combine 2 tablespoons of flour, Chat Masala and cooking oil to make a paste.
  5. 5Roll a dough ball thinly, spread the paste over it, fold, and roll up into a spiral. Press down the end.
  6. 6Let the paratha rest for 10 minutes, then roll into a circular shape.
  7. 7Cook on a preheated oiled skillet, add oil on both sides. Cook until golden and crispy.
  8. 8Lightly press the paratha to separate layers while hot.
