High Protein Lemon Cake

Ingredients
- Juice of 1 lemon
- 400g vanilla protein pudding
- 2 eggs
- 2 packages lemon zest
- 2 tablespoons erythritol
- 1 package baking powder
- 150g soft wheat semolina
- 2 tablespoons sugar (for glaze)
- 1 tablespoon lemon juice (for glaze)
Instructions
- 1In a bowl, combine lemon juice, vanilla protein pudding, eggs, lemon zest, erythritol, baking powder, and soft wheat semolina.
- 2Stir the ingredients together.
- 3Pour into a baking pan lined with parchment paper.
- 4Bake at preheated oven for 35 minutes.
- 5Remove the cake from the oven.
- 6Make the glaze by mixing 2 tablespoons of sugar and 1 tablespoon of lemon juice together.
- 7Drizzle glaze over the cake.
