High Protein Lemon Cake

Ingredients

  • Juice of 1 lemon
  • 400g vanilla protein pudding
  • 2 eggs
  • 2 packages lemon zest
  • 2 tablespoons erythritol
  • 1 package baking powder
  • 150g soft wheat semolina
  • 2 tablespoons sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. 1In a bowl, combine lemon juice, vanilla protein pudding, eggs, lemon zest, erythritol, baking powder, and soft wheat semolina.
  2. 2Stir the ingredients together.
  3. 3Pour into a baking pan lined with parchment paper.
  4. 4Bake at preheated oven for 35 minutes.
  5. 5Remove the cake from the oven.
  6. 6Make the glaze by mixing 2 tablespoons of sugar and 1 tablespoon of lemon juice together.
  7. 7Drizzle glaze over the cake.
