Green Sriracha Pasta with Shrimp

Ingredients
- 6-8 garlic cloves
- 2 jalapeños or serranos
- 1 1/2 tbsp ginger
- 2 tbsp lemongrass
- 1/4 cup unsweetened coconut
- Green tops of 1 bunch scallions
- Most of a bunch cilantro
- 1/4 cup basil
- 1-2 tbsp white vinegar
- 2-3 tbsp olive oil
- 1 lb shrimp, peeled and deveined
- 1 bell pepper, chopped
- 1/2 lb spaghetti
- Salt, to taste
- Lime wedges, for garnish
Instructions
- 1In a food processor, combine garlic, jalapeños, ginger, lemongrass, unsweetened coconut, scallion greens, cilantro, and basil. Pulse until finely chopped.
- 2Add vinegar and olive oil to the food processor and pulse until the mixture resembles pesto. Adjust seasoning as needed.
- 3Split the shrimp lengthwise.
- 4In a pan over medium heat, add olive oil and bell pepper, and cook until slightly softened.
- 5Slide bell pepper out of the way, add shrimp and white parts of green onions to the pan. Cook until shrimp is pink and cooked through.
- 6Cook spaghetti in salted water until al dente.
- 7Remove spaghetti from water and place into the pan with shrimp and bell peppers, reserving pasta water.
- 8Add a scoop of green sriracha to the spaghetti and toss to coat. Add pasta water if needed to adjust the consistency.
- 9Serve immediately, garnished with cilantro leaves and lime wedges.
Tips
- *Adjust the amount of green sriracha to your desired level of spiciness.
- *Store leftover green sriracha in the refrigerator for up to a week.
