Ingredients

  • 1 cup avocado oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1 whole egg

Instructions

  1. 1Pasteurize the egg by immersing it in 140 degrees Fahrenheit (60 degrees Celsius) water for 4-5 minutes, then transfer it to a cold bath.
  2. 2Combine avocado oil, Dijon mustard, salt, lemon juice, and red wine vinegar in a measuring cup.
  3. 3Add the whole pasteurized egg to the measuring cup.
  4. 4Using an immersion blender, blend all ingredients, keeping the blender down to cut the egg yolk at the same time. Hold the blender down for 10-20 seconds, then work the blender upward to fully emulsify the mayonnaise.
