How To Make Genoise (Sponge Cake)

Ingredients
- 9 eggs
- 9oz granulated sugar
- 9oz cake flour
- 3 oz vegetable oil
- 0.25 oz vanilla extract
Instructions
- 1Preheat oven to 325 degrees F.
- 2Crack 9 eggs into a stand mixer bowl, add 9oz of granulated sugar. Whisk until well mixed.
- 3Heat egg/sugar mixture over a double boiler until it reaches 120 degrees F.
- 4Place heated mixture into stand mixer with whisk attachment, and whip on high speed for 5 minutes.
- 5Stabilize foam on medium high speed 10 minutes.
- 6Grease (2) 8 inch cake pans.
- 7Sift 9oz of cake flour into the egg foam, fold gently.
- 8Sacrifice a small amount of batter into 3oz vegetable oil, and a quarter ounce of vanilla. Mix vigorously, then add mixture to batter, and fold until homogeneous.
- 9Divide batter evenly amongst the two cake pans.
- 10Bake at 325 F for 26 minutes, or until cake springs back when touched gently.
- 11Flip cakes upside down onto a sheet pan lined with parchment paper to cool. After an hour, release from the pans.

- *Store genoise in plastic wrap, for 3 weeks in the refrigerator or 3 months in the freezer
