Mango Sticky Rice Dessert

Ingredients
- 2 young coconuts
- Rice
- Sugar
- Vanilla bean
- Mangos
- Lime
- Truffle shavings
- Agar agar
- Water
- Edible gold leaf
Instructions
- 1Open the coconuts and extract coconut water and meat.
- 2Mix some coconut meat with coconut water and blend to create a creamy texture. Sweeten to taste.
- 3Cook rice in water. Set aside.
- 4In a saucepan, heat coconut milk, sugar, and vanilla bean to create a sauce.
- 5Mix the rice with the sauce.
- 6Peel and slice mango. Style into a spiral.
- 7Make mango purée and season with lime juice and truffle shavings.
- 8Mix water and agar agar, bring to boil and pour in a rectangular container. Refrigerate to create gel.
- 9Press the rice mixture into a small metal mold. Set a mango spiral on the top. Spoon mango purée and gelatin sphere. Add a scoop of coconut sorbet, a dash of coconut cream, and decorate with edible gold leaf.
