Mashed Potato Fries

Ingredients
- Boiled potatoes 3
- Salt to taste
- Tapioca flour 2 tablespoons
- Potato starch 2 tablespoons
- Melted butter 2 tablespoons
- BBQ rub 1 tablespoon
- Cayenne pepper 1/2 teaspoon
- Garlic powder 1/2 teaspoon
- Onion powder 1/2 teaspoon
- Smoked paprika 1/2 teaspoon
- Chili powder 1/2 teaspoon
- Sugar 1/2 teaspoon
- Dried parsley 1/2 teaspoon
- Vegetable Oil for frying
Instructions
- 1Peel the potatoes
- 2Cut the potatoes into cubes
- 3Boil the potatoes with salt
- 4Mash the potatoes
- 5Press the mashed potatoes through a sieve to remove excess water
- 6Add tapioca flour, potato starch, and melted butter to the mashed potatoes
- 7Mix well to form a dough
- 8Roll the dough out on parchment paper and shape into a rectangle
- 9Cut the dough into squares
- 10Freeze the mashed potato squares for 30 minutes–1 hour
- 11Heat oil in a pot
- 12Fry the mashed potato squares until golden brown
- 13Remove the fries from the oil and place them in a bowl
- 14Add BBQ rub, cayenne pepper, garlic powder, onion powder, smoked paprika, chili powder, sugar, and dried parsley to the fries
- 15Toss to coat
Tips
- *If you fry mashed potato squares right away, they will fall apart. Freeze them for 30 minutes–1 hour before frying.
