Ingredients
- 6 wheat tortillas (28cm / 11 inches)
- 900g extra lean ground beef (5% fat)
- 2 yellow onions (250g total)
- 300g sieved canned tomatoes
- 1 tablespoon salt
- 20-25g black pepper
- 2 teaspoons oregano
- 4 Laughing Cow cheese wedges
- 120g fat-reduced shredded mozzarella
- 5g olive oil spray

Instructions
- 1Dice two yellow onions (250g total).
- 2Add 5g of olive oil spray to the biggest pan. Switch up the heat to medium-high.
- 3Add the ground beef, 10g salt, 10g pepper, and 4g garlic powder to the pan. Fry it until it’s mostly browned, 4-5 minutes.
- 4Add diced onions to the meat and fry for another 5-6 minutes.
- 5Add tomato sauce, mix well until covered, and cook for 1 minute.
- 6Add 4 Laughing Cow cheese wedges and mix with a spatula until incorporated, about 2-3 minutes.
- 7Add the mozzarella and mix until melted.
- 8Transfer the meat mixture to a large plate and refrigerate for 20 minutes to cool.
- 9Prepare six pieces of aluminum foil.
- 10Lay a tortilla on top of a piece of aluminum foil. Evenly spread 225g of meat mixture on the lower third of each tortilla. Leave space around the edges.
- 11Fold both sides into the middle. Pull the lower side up and over the meat mixture and roll tightly.
- 12Wrap tightly with aluminum foil.
- 13Place the aluminum foil wrapped burritos into a freezer zip-lock bag and freeze for up to 3 months.
- 14To reheat, microwave the burrito on defrost (260 watts) for 7-8 minutes, then on 620 watts for 3-4 minutes, or until heated through.
Tips
- *It's recommended to buy a fresh package of tortillas and not open it until the very end of the process to prevent them from becoming stiff and cracking.
- *If you use another cheese, make sure it has low moisture.
- *Transferring the cooked meat filling to a plate and refrigerating it before rolling will help reduce sogginess in the burritos.
- *Use a thermometer to ensure the interior of the burrito is hot before serving.
