New Improved Baked Feta Pasta

Ingredients
- Olive oil as needed
- Finely minced garlic as needed
- 2 pints cherry tomatoes
- Kosher salt to taste
- Freshly ground black pepper to taste
- 10 ounces feta cheese
- Balsamic vinegar as needed
- Dried oregano to taste
- Red chili flakes as needed
- Freshly sliced basil as needed
- 2-3 tablespoons reserve pasta water
- Pasta
Instructions
- 1Drizzle olive oil into baking pan.
- 2Add garlic to oil and mix.
- 3Add tomatoes, salt, and pepper and toss with spatula until nicely coated.
- 4Make space in the center for feta cheese.
- 5Transfer feta cheese to the center of the pan.
- 6Drizzle feta cheese with balsamic vinegar.
- 7Sprinkle oregano and red chili flakes on top.
- 8Drizzle olive oil over top.
- 9Bake at 450 F for 30-35 minutes or until tomatoes are roasted and the cheese is browned.
- 10Cook pasta in salted water. Save half a cup of pasta water.
- 11Grab a fork, smash and stir ingredients into a sauce.
- 12Toss in freshly sliced basil.
- 13Add reserve pasta water.
- 14Add pasta and mix together.
Tips
- *Add more salt to taste.
- *Add more pasta water to desired consistency.
