New Improved Baked Feta Pasta

Ingredients

  • Olive oil as needed
  • Finely minced garlic as needed
  • 2 pints cherry tomatoes
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 10 ounces feta cheese
  • Balsamic vinegar as needed
  • Dried oregano to taste
  • Red chili flakes as needed
  • Freshly sliced basil as needed
  • 2-3 tablespoons reserve pasta water
  • Pasta

Instructions

  1. 1Drizzle olive oil into baking pan.
  2. 2Add garlic to oil and mix.
  3. 3Add tomatoes, salt, and pepper and toss with spatula until nicely coated.
  4. 4Make space in the center for feta cheese.
  5. 5Transfer feta cheese to the center of the pan.
  6. 6Drizzle feta cheese with balsamic vinegar.
  7. 7Sprinkle oregano and red chili flakes on top.
  8. 8Drizzle olive oil over top.
  9. 9Bake at 450 F for 30-35 minutes or until tomatoes are roasted and the cheese is browned.
  10. 10Cook pasta in salted water. Save half a cup of pasta water.
  11. 11Grab a fork, smash and stir ingredients into a sauce.
  12. 12Toss in freshly sliced basil.
  13. 13Add reserve pasta water.
  14. 14Add pasta and mix together.

Tips

  • *Add more salt to taste.
  • *Add more pasta water to desired consistency.
