Roasted Beet Dip

Ingredients

  • 3 medium sized beets
  • 1 clove garlic
  • handful of parsley
  • handful of walnuts
  • big scoop of yogurt
  • nice drizzle tahini
  • salt to taste

Instructions

  1. 1Wrap each beet in tin foil
  2. 2Place wrapped beets on a sheet tray
  3. 3Roast in oven at 375 degrees for about an hour until a fork slides in with little resistance
  4. 4Rinse beets under water and peel skin off
  5. 5Remove end pieces and slice the rest of the beet into wedges
  6. 6Put the beet wedges, garlic, parsley, walnuts, yogurt, tahini, and salt in a food processor
  7. 7Blend until desired consistency

  • *Beets are good to eat roasted raw
  • *Eat dip with chips or veggies
