Roasted Beet Dip

Ingredients
- 3 medium sized beets
- 1 clove garlic
- handful of parsley
- handful of walnuts
- big scoop of yogurt
- nice drizzle tahini
- salt to taste
Instructions
- 1Wrap each beet in tin foil
- 2Place wrapped beets on a sheet tray
- 3Roast in oven at 375 degrees for about an hour until a fork slides in with little resistance
- 4Rinse beets under water and peel skin off
- 5Remove end pieces and slice the rest of the beet into wedges
- 6Put the beet wedges, garlic, parsley, walnuts, yogurt, tahini, and salt in a food processor
- 7Blend until desired consistency

- *Beets are good to eat roasted raw
- *Eat dip with chips or veggies
