Soy-Glazed Fried Chicken from Chainsaw Man

Ingredients
- 2 pounds boneless chicken thighs
- 1-inch cube of ginger
- 3-4 garlic cloves
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/4 cup sake
- 3 tablespoons honey
- Salt to taste
- Potato starch as needed
- Neutral oil as needed
- Soy sauce as needed
- Chili crisp as needed
- Red miso paste as needed
- Sesame oil as needed
- Lemon wedges for serving
- Lettuce for serving
- 6 eggs
- Sugar to taste
- Dashi as needed
Instructions
- 1Cut boneless chicken thighs into 1-1/2 inch pieces.
- 2Grate ginger and garlic directly over the chicken.
- 3Add liquid seasoning: soy sauce, mirin, sake, honey, salt.
- 4Toss together until chicken is coated, then refrigerate for at least an hour.
- 5While the chicken is marinating, whisk eggs with salt, sugar, and dashi.
- 6Add neutral oil to a non-stick pan and start cooking this in layers.
- 7Spread an initial layer down, whisk it, and make sure that it sets nicely and doesn't overcook on the bottom.
- 8Once it's pretty much set, roll that over to one side, push it, and then add a second layer of egg to the bottom, making sure to keep this circular formation going.
- 9Once that layer has set, roll the rolled side over the non-cooked side.
- 10Repeat the spreading, rolling, and pushing back and forth to end up with a large rolled omelet.
- 11Transfer the omelet to a resting surface, then shape and set in a cylindrical form, and cut off the ends.
- 12Heat oil in a frying pan to 325°F.
- 13Take the marinated chicken and toss a few pieces in potato starch to coat.
- 14Add the chicken to the oil and let the first layer turn light golden brown.
- 15Remove the batch of chicken and set on a sheet rack over a tray lined with paper towels.
- 16Crank heat up to 375°F, and return the batch of chicken into the oil until it starts to get dark brown. Make sure to not overcrowd the pan.
- 17In a wok, add soy sauce, chili crisp, honey, miso paste, and sesame oil together and let it simmer until it is nicely bubbled.
- 18Dump non-wet fried chicken into the mixture, and mix so the chicken has a good even coating.
Tips
- *When serving, a long rectangular dish with lettuce and the sliced egg rolled into it is an added plus.
- *Lemon wedges and green to make the plating appealing.
- *Mix the marinading liquid and potato starch together in a separate container.
