양념게장 (Spicy Marinated Crab)

Ingredients
- Frozen blue crabs (꽃게) 1kg
- Soju 100ml
- Vinegar 3 spoons
- Gochugaru (Korean chili powder) 8 spoons (55g)
- Jaggery (원당) 7 spoons (or sugar 4-5 spoons)
- Soy sauce 11 spoons (85ml)
- Fish sauce (멸치액젓) 2 spoons
- Sand lance sauce (참치액젓) 1 spoon
- Cooking wine 2 spoons
- Minced garlic 2 spoons
- Minced ginger 1 spoon
- Corn syrup (올리고당) 3 spoons
- Pepper a pinch
- Ground sesame seeds 3 spoons
- Chopped scallions
- Chopped chili
- Sesame oil
Instructions
- 1Wash crabs quickly in running water (do not soak) and scrub with a brush
- 2Cut the crabs in half or as desired
- 3Cut off claws to use in ramen/broth later, freeze them
- 4Add soju and vinegar to a bowl of crabs, marinate in the refrigerator for 20-30 minutes
- 5Mix gochugaru, jaggery, soy sauce, fish sauce, sand lance sauce, cooking wine, minced garlic, minced ginger, corn syrup, pepper, and ground sesame seeds in a bowl
- 6Take the crabs out of the fridge, drain, and pat dry with a paper towel
- 7Mix the marinade with crabs until fully coated
- 8Sprinkle sesame seeds and refrigerate
- 9Serve it the next day with chopped scallions, chopped chili, and sesame oil

- *Add ginger, don't skip!
- *Make marinade one day before to develop flavor
