Texas Trash Chicken Casserole

Ingredients
- enchilada sauce to cover the bottom of the dish
- 1 can refried beans
- 4 pieces of chicken
- Taco seasoning to taste
- 1 block cream cheese, softened
- 1 can diced green chilies
- 1 cup shredded cheese
- 1/4 cup enchilada sauce
- 1 tbsp taco seasoning
- Shredded cheese for topping
- Chopped green onions (optional)
Instructions
- 1Preheat oven to 350 degrees F.
- 2Pour enchilada sauce into the bottom of a 9x13 baking dish.
- 3Scoop refried beans over enchilada sauce
- 4Place one piece of chicken on each scoop of refried beans.
- 5Season generously with taco seasoning.
- 6In a mixing bowl, combine the cream cheese, diced green chilies, 1 cup shredded cheese, 1/4 cup enchilada sauce, and 1 tbsp taco seasoning.
- 7Scoop mixture over the chicken and spread evenly.
- 8Bake for 30 minutes.
- 9Remove from oven, top with shredded cheese, and return to oven for 5-10 minutes, until cheese is melted and chicken is cooked through.
- 10Sprinkle chopped green onions on top.

- *Serve over rice, lettuce, or in a tortilla.
