Vegan Turkey Roast

Ingredients
- 14 oz firm tofu
- 3 tbsp nutritional yeast
- 2 tbsp water
- 1 tbsp white miso paste
- 2 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/4 tsp ground sage
- 2 tsp vegetable broth powder or vegan chicken broth concentrate
- 1 1/2 cups vital wheat gluten
- 1/4 cup vegan butter, melted
- 4 garlic cloves, minced
- 1 1/2 tsp soy sauce
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1 large sheet of rice paper
- Roasted broccoli and carrots, for serving
Instructions
- 1In a food processor, mix together tofu, nutritional yeast, water, white miso paste, onion powder, garlic powder, salt, thyme, sage, and vegetable broth until smooth.
- 2Add in the vital wheat gluten, and mix until a dough forms.
- 3Wrap the dough in aluminum foil.
- 4Steam the dough for 1 hour.
- 5After steaming, refrigerate it overnight.
- 6The next day, preheat the oven to 400 degrees.
- 7Prepare a buttery marinade with the melted vegan butter, minced garlic, soy sauce, thyme, and black pepper.
- 8Wet a sheet of rice paper to make it malleable.
- 9Unwrap the roast, and brush with the buttery marinade.
- 10Cover the roast with the rice paper.
- 11Bake for 15 minutes, then brush with remaining marinade.
- 12Continue to bake for another 15-20 minutes.
