Vegan Turkey Roast

Ingredients

  • 14 oz firm tofu
  • 3 tbsp nutritional yeast
  • 2 tbsp water
  • 1 tbsp white miso paste
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp ground sage
  • 2 tsp vegetable broth powder or vegan chicken broth concentrate
  • 1 1/2 cups vital wheat gluten
  • 1/4 cup vegan butter, melted
  • 4 garlic cloves, minced
  • 1 1/2 tsp soy sauce
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 large sheet of rice paper
  • Roasted broccoli and carrots, for serving

Instructions

  1. 1In a food processor, mix together tofu, nutritional yeast, water, white miso paste, onion powder, garlic powder, salt, thyme, sage, and vegetable broth until smooth.
  2. 2Add in the vital wheat gluten, and mix until a dough forms.
  3. 3Wrap the dough in aluminum foil.
  4. 4Steam the dough for 1 hour.
  5. 5After steaming, refrigerate it overnight.
  6. 6The next day, preheat the oven to 400 degrees.
  7. 7Prepare a buttery marinade with the melted vegan butter, minced garlic, soy sauce, thyme, and black pepper.
  8. 8Wet a sheet of rice paper to make it malleable.
  9. 9Unwrap the roast, and brush with the buttery marinade.
  10. 10Cover the roast with the rice paper.
  11. 11Bake for 15 minutes, then brush with remaining marinade.
  12. 12Continue to bake for another 15-20 minutes.
